- ½ teaspoon cumin seeds
- 1 small onion, finely chopped (optional)
- 1 small tomato, chopped

- ¼ teaspoon turmeric powder
- 3 cups water, plus extra hot water as needed

- 1 tablespoon chopped fresh coriander
- ¼ teaspoon freshly ground black pepper, or to taste
How to Make Moong Dal Khichdi
Step 1: Wash the rice and dal.
Rinse the rice and yellow moong dal thoroughly under running water until the water becomes relatively clear. Drain and set aside. Soaking them for 15–20 minutes is optional, but it may help them cook more evenly.
Step 2: Heat the ghee and temper the cumin.
Heat 2 teaspoons of Veera Desi Cow Ghee in a stovetop pressure cooker over medium-low heat. Add the cumin seeds and let them sizzle until fragrant. Avoid letting them burn.
Step 3: Build the flavour.
Add the grated ginger and sauté briefly. If using onion, add it and cook until softened. Add the chopped tomato and turmeric, then cook until the tomato begins to soften.
Step 4: Add the rice and dal.
Add the drained rice and moong dal. Stir gently for about a minute so the grains are coated with the ghee and spices.
Step 5: Pressure-cook until soft.
Pour in 3 cups of water and add salt. Stir, close the cooker and cook according to your pressure cooker's instructions. As a starting point, a typical stovetop cooker may need approximately 3–4 whistles over medium heat, although the time varies by cooker and ingredient preparation.
Turn off the heat and allow the pressure to release naturally before opening the cooker. Follow the manufacturer's safety instructions.
Step 6: Adjust the consistency.
Check that the rice and dal are completely tender. Stir the khichdi gently. For a softer, creamier texture, add a little hot water and simmer briefly until it reaches your preferred consistency. Add more hot water if needed rather than allowing the mixture to become too thick.
Step 7: Finish and serve.
Stir in some of the chopped coriander and black pepper. Divide into two bowls and finish with the remaining 1 teaspoon of Veera Desi Cow Ghee, distributed between the servings. Garnish with the remaining coriander and serve hot.
What to Serve with Khichdi
Keep the meal simple with any of these accompaniments:
- Plain curd for a cool, creamy contrast.
- Roasted papad for crunch.
- A small serving of pickle for tanginess.
- A seasonal vegetable sabzi for additional variety.
Tips for Better Khichdi
For a creamier texture: Add hot water gradually after pressure cooking and stir until the rice and dal soften into a cohesive mixture.
For a lighter flavour: Skip the onion and tomato and use a simple cumin, ginger and turmeric tempering.
For more flavour: Let the cumin become fragrant in the ghee before adding the remaining ingredients.
For a fresh finish: Add the finishing ghee after cooking rather than cooking all of it for the entire duration.
