A2 Gir Cow Desi Ghee: Bilona Method, Process & Quality
Desi ghee adds aroma and richness to dal, roti, khichdi and parathas. But understanding A2 Gir cow desi ghee means knowing three things: how bilona ghee is made, what the label terms mean, and how to judge quality.
How Bilona Ghee Is Made: Milk to Ghee
The traditional bilona method is curd-based:
Milk → Curd → Churning → Butter → Ghee
Milk is first set into curd. The curd is churned, traditionally with a wooden churner, to separate butter. The butter is then heated slowly to remove moisture, leaving ghee with its characteristic aroma and texture.
This is also why bilona ghee costs more than regular ghee. It takes many litres of milk to make one kilo (commonly cited as around 25 to 30 litres, depending on the milk’s fat content). Still, “bilona” describes a method. It does not prove quality on its own.
What Does A2 Gir Cow Desi Ghee Mean?
- Gir cow: Gir is an indigenous cattle breed from Gujarat. The claim refers to the milk source, so sourcing records and traceability matter.
- A2: A2 refers to a type of beta-casein protein in milk. Ghee is almost entirely milk fat with very little protein, so an A2 claim describes the milk used, not something easily tested in the ghee itself. It is not proof of added health benefits.
- Desi ghee: Ghee is clarified milk fat made by heating butter or cream to remove moisture and milk solids. Flavour varies with the milk and the process.
How to Check Desi Ghee Quality
Look beyond the front of the pack:
- FSSAI licence number and manufacturer details
- Batch number for traceability
- Lab test reports from an accredited laboratory, where the brand shares them
- Clear sourcing information about the milk and the method
- Packaging that protects the ghee, such as glass jars or sealed containers
Treat claims about milk origin, method or purity as things to verify, not assume.
Using Desi Ghee in Everyday Cooking
A small amount goes a long way. Spoon it over moong dal khichdi, spread it on a hot roti, use it for parathas, or finish a dal tadka. Store it in a clean, dry, airtight jar and use a dry spoon each time.
